Mother's Day Pasta Salad

I hope all of the Moms out there had a terrific Mother's Day this past Sunday. Mine was wonderful with what has become a tradition, going to my oldest son's house along with his siblings and inlaws. This year a couple of my daughters were unable to be there because of job commitments but we had a nice time despite that.
My son takes care of the main dish and the beverages and the rest of us bring something to share. This year I brought baked beans (just Bush's reheated) and my pasta salad.

My Pasta Salad:
I cooked up two pounds of garden rotini and seasoned these with a generous amount of McCormack Salad Supreme seasoning blend:



 

I sliced carrots, cucumber, red bell peppers, yellow tomatoes, green and black olives into the pasta and added a bit more seasoning:
 
I then dressed the entire salad with a bottle of Garlic Expressions dressing:
And gave it a good tossing and it was ready to eat:

Loco Moco

Loco Moco..what the heck is THAT? you may ask. It is a Hawaiian specialty that I first tried a few years ago when I was visiting family in the islands. A simple dish the combination of flavors is wonderful. Truly Island Comfort Food.  Last night I served a simple salad with Garlic Expressions dressing with this.

Loco Moco:
Serves 4

1 cup uncooked white rice
4 hamburger patties
2 cups beef/brown gravy
4 eggs
freshly ground pepper

Cook rice in rice steamer or in a pot on the stove. While rice is cooking heat prepared gravy ( I usually use two packets of gravy mix for this instead of the bottled kind)over low heat. Grill or pan fry hamburger patties to desired doneness. When rice is cooked and burgers are ready, cook eggs sunny side up.
On a large dinner plate place 1/2 cup cooked rice, top with one burger patty, pour gravy over top of rice and burger, top with sunny side egg. Grind a little pepper over the whole thing and serve.
Pretty? No. Delicious? Yep!

May Dinner Menus

Menu plannerI'm getting a really late start on these menus. We've mostly had dinners on the fly the last few days. I spent the weekend dog sitting at the GF's house and went out to eat once with my youngest daughter then grilled some chicken and served it with baked potatoes and corn on Saturday and on Sunday after the GF got home we took the kids out to dinner for Cinco De Mayo to a new Mexican restaurant we'd be meaning to try. Monday was the tortellini dish I blogged about and last night was my bowling banquet. We have plans for four remaining days this month, dinner out with friends this coming Friday night, Mother's Day at my oldest son's home, a picnic on Memorial Day weekend and the last day of the month we will be traveling out of town to a wedding.
This left 21 more meals to plan for. I decided to pare back my spending on groceries this month and use up some of the meat/poultry/fish in the freezer as well. Meals using food already on hand are in bold, new recipes are in italics, and recipes using planned overs have an asterisk.

Farmer's Market

The area I live in is blessed with what is a traveling Farmer's Market that rotates different towns in the area on different days. It is also strictly seasonal between June and September. During the months that this is not available we have a brick and mortar market not too far away.
The weather here has been beautiful the last week, sunny skies and temperatures in the low to mid 70s. The kind of weather that has me thinking fresh fruits and veggies and grilling. I really should have devoted time yesterday after work to do a big grocery store trip but knowing that we were well stocked up on items except for fresh produce I chose to do instead a small run to this farmer's market.
The parking lot was a zoo and the market was wall to wall human bodies. Ugh. I changed my mind about a leisurely stroll around the place and instead got out my Iphone and pulled up my list and got down to business. $23.46 later I had purchased 2 quarts of fragrant and beautiful to look at strawberries, a pint of blueberries, a small baggie of snap peas, 4 large red bell peppers, a bag of baby spinach, a bag of three romaine hearts, a quart of grape tomatoes, a bag of shredded organic carrots, an English cucumber, and 5 lbs of lemons.

Dinner was a carry over menu item from April for a new to me recipe from Pampered Chef's 29 Minutes to Dinner for Brown Butter Tortellini with spinach and ham. It was a big hit!!Brown Butter Tortellini with Spinach & Ham

1 20 oz package cheese tortellini, cooked according to package directions
1 bag baby spinach
1 8 oz ham steak (I used turkey ham)
1 large red bell pepper
1/4 cup butter (no substitutes)
coarsely ground black pepper.
While tortellini is cooking place spinach in a colander. Dice ham and red bell peppers. Over medium heat melt butter and turn heat to low, cook butter about 5-7 minutes until it is a deep brown color. Add bell peppers to butter. Drain tortellini on top of spinach. Add ham, tortellini and spinach to skillet and toss well with the butter and red bell pepper. Grind pepper over top, stir and serve. Makes 6 servings.

When life gets in the way

I had such good intentions of blogging on a regular basis the last couple of weeks but as often happens when plans get made they go awry. The last weekend of April was wonderful, the GF and I took a nice two hour ride up into rural PA to visit an old friend and her hubby who were in town and then our Sunday was nice a leisurely. Monday I took GF in for a small eye surgery that went well. So far so good.
Then the week quickly dissolved into a mini nightmare with one of my children needing some emergency medical help and Mom here dealing with a visiting granddog and of course the worry that goes along with being a Mom. Things all worked out and are back on track for the adult child. The week ended nicely too. I dogsat for GF over the weekend while he went out of town. My youngest daughter and I had a nice mommy-daughter date on Friday and on Saturday I spent a very pleasant couple of hours in the warm sunshine watching a grand-nephew play Little League ball. Brought back lots of good memories of when my older boys played. :-)
When GF got back to town he and I and youngest daughter and her boyfriend all went out for Mexican food together for Cinco De Mayo and had a terrific time together.
I also did a bit of baking yesterday!
In the morning I made a quick sour cream coffee cake :
 
While doing a couple of loads of laundry I also made a batch of Toll House Cookies.
I took two sticks of butter and beat them until fluffy then added 3/4 of a cup of sugar and 3/4 of a cup of brown sugar:
I beat the butter and sugar together, then added two eggs and a teaspoon of vanilla extract:
 I beat this mixture until fluffy than added the remaining dry ingredients of  two and a quarter cups of flour, a teaspoon of baking soda and a teaspoon of salt.
 I mixed all of these ingredients together then added a half cup of chopped walnuts and two cups of chocolate chips:
 And mixed these well.
 
I lined several cookie sheets with parchment paper and got out my favorite cookie scoop:
 I scooped cookie dough onto the prepared trays
 And using a glass wrapped in a dampened cotton napkin  I lightly pressed each ball of dough down into a circle:
 10 minutes in a 375 degree oven and we have a yummy treat!

5/3: $ 31  for dinner out with my 18 year old daughter (a mommy-daughter date)

5/4:$ 48 for gas for my SUV; $21.08 at Target for household supplies: carpet deodorizer, food saver 'caps', body wash, Tide to go sticks, and mouthwash.

5/5: $ 29.95 on a gift for my mother in law for Mother's Day (free shipping!) and $23 on a collapsible insulated picnic basket
